The first half of 2014 has been filled with so much good food straight outta my kitchen- that’s for sure. So I thought I would reflect a little bit on the best things I’ve eaten this year.
But also- because I never really share my food flops with you guys- I figured why not share some of those too. Because they exist. Trust me. I might not post about them all the time (because who wants to waste their time looking at sad food) but they have happened.
Let’s do talk about two recent flops before getting into the good stuff. First up. These spinach crepes. I’ve been wanting to make these spinach crepes ever since I saw them. Green Kitchen Stories has a way of presenting recipes that is just… so wonderful. They really take you into their world and make you feel like you’re standing in their kitchen with them. I was encapsulated by this recipe and the post surrounding it- I had to make the crepes. I set up the kitchen, ingredients mise-en-place, and thought I did everything right. It just didn’t happen. There were no crepes. There was, however, a giant container filled with green goop and some mushy piles of crepe batter gone awry. Maybe I need better skillets or a better spatula? I don’t know man. But this recipe did not pan out (pun intended). Because I hate wasting food, I turned the batter into a green buckwheat egg scramble of sorts… it ended up being delicious. So weird. But really good! I could market this as the new breakfast trend of the year and sell it to the masses. One buckwheat recipe that did work out as planned was this buckwheat porridge recipe. Gluten free porridge? Sign me up. So tasty. It’s a good one to add to your morning rotation. I have a feeling I’m going to be making this one more often. I threw some blueberries, almond butter, and coconut in there… yeah baby. My other fail this weekend was these rhubarb blondies.
Okay okay- they’re weren’t a fail. But they weren’t what I expected. I made a paleo blondie recipe and topped it with the rhubarb topping from the original recipe- and it looked perfect. Beautiful even. I was out of this world excited to eat these.
And then I didn’t cook them long enough (I think) or I didn’t get enough liquid out of the rhubarb before baking (maybe?). The middle wouldn’t set and when I cut into them- BIG mess. I tried to freeze them a bit to set them… kinda worked? Will and I ate them anyway? They seemed cooked enough where the eggs wouldn’t be an issue. I think the liquid to solid ratio was just off somewhere. If you’re interested in a paleo rhubarb blondie mess in a bowl- come on over. I have ten sitting in my fridge.
The fail of a dessert followed a winner of a dinner. Yes. Let’s get to my food victories. Luckily, they out number the fails. I think the only other recipe I made this year that was meh was this BLT pizza.
I bought yellowfin tuna steaks for the first time this weekend. They were on sale at Whole Foods for $14 off the normal price… WHAT. PLUS my employee discount? Yeah man!
I served them over beds of arugula and a asian salsa of sorts made of carrots, green onions, green pepper, cilantro, red onion, and lime juice. There was also brown rice, avocado, and a tamari dressing thrown in the mix. Om nom nom. SO GOOD.
Now let’s go back in time. Back to the rest of this year.
Pizza in 2014 has been balanced out by plenty of good vegetable dishes. This roasted honey cauliflower with pine nuts and crispy sage was divine! And rhubarb turned bbq sauce was quite possibly the best idea ever. Closely followed by the combination of these veggies and spreads sandwiched between some good bread.
But this pasta recipe has been my favorite by far thus far. Who knew squash blossoms were so awesome?
Before rhubarb bbq sauce and plum rose compote- I was obsessed with this sundried tomato spread. One of the better things to go inside my mason jars this year. That and of course the vegan parmesan cheeze that I won’t stop talking about.
In Will’s opinion- these chili cashew shrimp noodles were the best thing I’ve cooked this year. I think. He was pretty obsessed with them.
Seafood lovah Allison also dished up this toasted coconut tilapia with pomegranate salsa, died, and went to heaven. And then died a second time after making pan seared calamari pasta. And then I just went full on cat mode on the world and died a handful more times when I became obsessed with this mediterranean tuna salad and ate it everyday for lunch.
And don’t even get me started on Giada’s vanilla mango mahi mahi. But actually the best part of this meal were the plantains- newest food obsession.
My dessert award has got to go to these healthier hummingbird cupcakes. They were spot on with flavor and didn’t make me miss the original at all. Solid recipe.
Two of the best things I’ve whipped up happen to be on the mexican side of things- enchiladas and blood orange margaritas. Yum. Yum. Yum. I ate those enchiladas for breakfast, lunch, and dinner. Wish I could say the same about the margs😉
I saved the best for last- the winners are without a doubt THIS toasted oatmeal with strawberries and coconut whip and THIS breakfast rice pudding.
I can’t wait to see what the rest of the year brings me. I love exploring food, intriguing flavor combinations, and eating all of the delicious things. How are there people out there who don’t just absolutely LOVE food?! There’s nothing better.
